Savory Russian cabbage soup with ground beef, carrots, onion, and cabbage simmered in a sweet tomato broth.
Ingredients:
  • 1.5 pounds ground lean beef
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 medium carrots, shredded
  • 1 onion, chopped
  • 0.5 cup white sugar
  • 2 tablespoons white vinegar
  • 4 cubes beef bouillon
  • 1.5 teaspoons salt
  • 2 quarts water, divided
  • 1 head cabbage, cored and cut into wedges
  • 3 cloves garlic, finely chopped
Instructions:
  • In a large pot, add ground beef, diced tomatoes, tomato sauce, carrots, onion, sugar, vinegar, bouillon cubes, salt, and pepper. Pour in 1 quart of water and bring to a boil. Stir occasionally to break up beef. Cover, reduce heat to low, and simmer for 30 minutes.
  • Add the rest of the water and bring to a gentle boil. Mix in cabbage and garlic. Let simmer until cabbage is soft, around 25 minutes. Serve in soup bowls.
