Russian Poppy Seed Roll

Delicious Russian sweet rolls with poppy seed, honey, raisin, nut filling.
Ingredients:
  • 1 cup warm milk
  • 2 (.25 ounce) packages active dry yeast
  • 1 teaspoon white sugar
  • 0.5 teaspoon lemon zest
  • 2 egg yolks
  • 0.25 teaspoon salt
  • 6 cups all-purpose flour
  • 7 tablespoons unsalted butter, melted
  • 2 cups poppy seeds
  • 1 cup milk, or as needed
  • 0.5 cup raisins
  • 2 egg whites
  • 0.25 cup honey
  • 0.25 cup white sugar
  • 0.25 cup chopped walnuts
  • 3.5 tablespoons unsalted butter, softened
  • 1 egg
  • 1 tablespoon water
Instructions:
  • In a large bowl, mix together warm milk, yeast, and 1 teaspoon of sugar until well combined. Allow the mixture to sit until the yeast softens and starts to form a bubbly foam, approximately 5 minutes.
  • Combine 1/2 cup sugar and lemon zest with the yeast mixture. Gradually whisk in 2 eggs and egg yolks, one at a time, ensuring thorough mixing after each addition. Then add salt followed by flour, blending well. Mix in melted butter until fully incorporated. Knead the dough for about 10 minutes until smooth and elastic. Shape the dough into a ball and transfer to a large, lightly oiled bowl, coating the dough by turning it around. Cover the bowl with a clean towel and allow the dough to rise in a warm place until doubled in volume, approximately 1 hour.
  • In a small pot, combine poppy seeds and 1 cup milk (add more if needed). Simmer over medium heat, then remove from heat and let sit for 15 to 20 minutes. Drain the milk. Use a food processor to pulse poppy seeds, or keep them whole. Combine poppy seeds with raisins, egg whites, honey, 1/4 cup sugar, walnuts, and 3 1/2 tablespoons butter to make the filling.
  • Gently deflate dough, transfer to a floured surface, and lightly knead. Divide dough in half. Roll out one half into a 10-inch sheet. Spread half of the filling, leaving a small border. Roll into a log shape. Repeat with the other half.
  • Place the rolls on a greased baking sheet and cover them with a kitchen towel. Allow them to rise until they have doubled in volume, which should take about 30 more minutes.
  • Preheat your oven to 350°F (175°C).
  • Combine the leftover egg with 1 tablespoon of water, then brush the mixture over the tops of the rolls.
  • Bake rolls in the oven until beautifully golden, for 20-25 minutes.
