Maximize leftovers with tasty freezer-friendly roast ribs.
Ingredients:
  • 165.00 gm sweet fruit chutney
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 36.80 gm rice bran oil
  • 5.00 gm ground cumin
  • 2.50 gm ground ginger
  • 1.5kg (4 racks) Aussie-style pork ribs (see note)
  • Lemon wedges, to serve
  • Coleslaw or mixed salad, to serve
Instructions:
  • In a bowl, mix chutney, parsley, garlic, oil, cumin, and ginger. Place ribs in a large glass or ceramic dish and coat with the chutney mixture. Cover and refrigerate for 30 minutes to enhance the flavors.
  • - Preheat your oven to 200°C/180°C fan-forced. - Arrange ribs in 2 roasting pans and generously season with salt and pepper. - Bake for 1 hour or until golden brown and fully cooked, flipping the ribs halfway through (tent with foil if browning too quickly). - Serve with lemon wedges and your choice of coleslaw or salad.
