Elevate your weekend lunch with this decadent and shareable special dish.
Ingredients:
  • 160g brown sugar
  • 165g salt
  • 3 star anise
  • 30.00 ml freshly grated ginger
  • 3 garlic cloves, chopped
  • Grated zest of 2 lemons
  • 2 long red chillies, seeds removed, sliced
  • 125ml soy sauce
  • 20.00 ml sesame oil
  • 1kg piece beef eye fillet (centre cut), trimmed
  • 36.40 gm olive oil
  • Good-quality chutney, to serve
Instructions:
  • In a shallow dish, mix together all ingredients except for the beef and olive oil. Add the beef and coat it in the marinade. Cover and refrigerate for at least 12 hours, rotating the beef in the marinade 2-3 times.
  • Allow the beef to come to room temperature and preheat the oven to 200°C.
  • Begin by rinsing the beef under cold water and patting it dry. Next, heat some oil in an ovenproof frypan on medium-high heat. Proceed by browning the beef on all sides for 2-3 minutes each. Transfer the beef to the oven and cook for 15 minutes for rare, or until it reaches your desired level of doneness. Let the beef rest for 10 minutes before slicing and serving it with chutney.
