Indulge in a sweet and tangy East Indian tamarind chutney.
Ingredients:
  • 1 tablespoon canola oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground ginger
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon fennel seeds
  • 0.5 teaspoon asafoetida powder
  • 0.5 teaspoon garam masala
  • 2 cups water
  • 1.125 cups white sugar
  • 3 tablespoons tamarind paste
Instructions:
  • In a saucepan over medium heat, warm the oil and sauté cumin seeds, ginger, cayenne pepper, fennel seeds, asafoetida powder, and garam masala for 2 minutes until fragrant.
  • Combine water, spices, sugar, and tamarind paste in a pan. Boil, then simmer until thick and chocolaty, about 20-30 minutes. Sauce will thicken as it cools.
