Zesty zucchini relish with bell peppers, nutmeg, and turmeric. Perfect on burgers, hot dogs, or any dish!
Ingredients:
  • 12 cups shredded unpeeled zucchini
  • 4 cups chopped onion
  • 5 tablespoons canning salt
  • 6 cups white sugar
  • 2.5 cups white vinegar
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon cornstarch
  • 1.5 teaspoons celery seed
  • 0.75 teaspoon ground nutmeg
  • 0.75 teaspoon ground turmeric
  • 0.5 teaspoon ground black pepper
Instructions:
  • Assemble all of the ingredients needed for the recipe.
  • Combine zucchini and onion in a large non-metallic bowl, generously sprinkle with salt, and massage gently to evenly distribute. Cover and refrigerate overnight.
  • Drain zucchini in a colander, rinse thoroughly under cool water, then squeeze out excess water; set aside.
  • In a large pot, combine sugar, vinegar, red and green bell pepper, and cornstarch with celery seed, nutmeg, turmeric, and black pepper. Mix well, then gently add drained zucchini. Bring to a boil over medium-high heat, then simmer on medium-low for 30 minutes.
  • Sterilize seven 1-pint jars and lids. Fill jars with relish, ensuring no air pockets remain. Fill jars to the top and seal with lids.
  • Prepare a large stockpot with a rack placed on the bottom and fill it halfway with boiling water. Gently submerge jars into the pot using a holder, ensuring a 2-inch gap between them. Add more boiling water if needed to cover the jars by 2 inches. Bring the water to a full boil, cover the pot, and process for 30 minutes.
  • Remove the jars from the pot and set them apart on a cloth-covered or wood surface. Let them cool completely. Press down on the lids to ensure they are tightly sealed (lid should not move).
