Sweet-Potato Muffins

Spiced sweet potato muffins bursting with walnuts and raisins, perfectly moist and flavorful.
Ingredients:
  • 1.125 cups packed brown sugar
  • 0.5 cup canola oil
  • 2 teaspoons baking powder
  • 1 teaspoon freshly grated nutmeg
  • 0.5 teaspoon ground allspice
  • 4 cups peeled, shredded sweet potato
  • 0.5 cup raisins
  • 1 cup walnuts
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
  • Combine brown sugar, oil, vanilla, and eggs in a small bowl and whisk until smooth.
  • Combine flour, baking powder, spices, salt, and grated sweet potatoes in a large bowl. Create a well in the center and pour in the egg mixture. Gradually mix the egg into the dry ingredients. Fold in raisins and walnuts.
  • Fill each tin to the rim with batter to create a large cap. Bake the muffins for 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean. Carefully run a paring knife around each muffin, then invert the pan and tap one edge on your work surface to release the muffins. Serve immediately.
