Romantic T-bone steaks seared to perfection and drizzled with a luscious red wine sauce for an unforgettable Valentine's Day meal for two.
Ingredients:
  • 2 T-bone steaks, 1 1/2 inches thick
  • onion powder to taste
  • coarse kosher salt to taste
  • coarse ground black pepper to taste
  • 12 sprigs fresh thyme
  • 1 tablespoon avocado oil, or more as needed
  • 0.25 cup butter
  • 4 cloves garlic
  • 0.75 cup red wine
  • 0.5 cup Worcestershire sauce
  • 0.5 cup beef broth
Instructions:
  • Generously sprinkle both sides of the steaks with onion powder, salt, and pepper. Place 3 sprigs of fresh thyme on each side of the steaks and seal them in vacuum-seal bags.
  • Submerge vacuum-sealed bags in a sous vide water bath at 129 degrees F (54 degrees C) for 1 1/2 hours.
  • Remove the steaks from the packaging, gently pat them dry with paper towels, and set aside the sprigs of thyme for later use.
  • Preheat a cast iron pan until sizzling hot. Drizzle in luxurious avocado oil. Sear steaks briefly, 45 seconds per side. As you sear the second side, introduce 2 tablespoons of decadent butter and garlic into the pan. Tilt the pan and spoon the bubbling butter over the steak. Add the rest of the butter and use tongs to caramelize the edges of the steak, about 45 seconds each.
  • After cooking the steaks, create a flavorful red wine sauce by adding red wine, Worcestershire sauce, thyme sprigs, and broth to the pan. Simmer until the liquid reduces by half for about 4 to 5 minutes. Strain the sauce into a bowl through a sieve and then drizzle it over the steaks before serving.
