Creamy one-skillet beef and noodle dish with zesty green chiles, taco seasoning, and tomatoes.
Ingredients:
  • 12 ounces extra-lean ground beef
  • 2 cups water
  • 1 (14.5 ounce) can diced tomatoes in juice, undrained
  • 1 (4 ounce) can Ortega® Mild Diced Green Chiles
  • 1 (1.25 ounce) package Ortega® Taco Seasoning Mix
  • 0.5 cup dried elbow macaroni
  • 1 cup shredded Cheddar cheese, divided
  • 0.66666668653488 cup evaporated milk
Instructions:
  • In a large skillet, sauté the beef until golden brown, stirring occasionally. Drain excess fat.
  • Combine water, tomatoes with their juices, green chiles, and the seasoning mix in a pot. Simmer until mixture reaches a boil.
  • Add the pasta into the pot and bring it back to a boil. Then, lower the heat and cover the pot. Allow the pasta to cook on low heat, stirring occasionally, for 14 to 16 minutes until it is tender.
  • Add the creamy evaporated milk and mix gently. Take the pan off the heat and stir in 1/4 cup of cheese. Sprinkle the rest of the cheese on top. Cover and allow it to rest for 5 to 10 minutes before serving.
