Irresistible taco pasta salad featuring ground beef, rotini, fresh lettuce, juicy tomatoes, and crunchy Doritos® for a potluck favorite.
Ingredients:
  • 1 pound lean ground beef
  • 1 (1 ounce) packet taco seasoning mix
  • 1 (16 ounce) package uncooked tri-color rotini pasta
  • 1 (16 ounce) bottle French salad dressing
  • 1 (14 ounce) can black beans, drained and rinsed
  • 1 (8 ounce) package shredded sharp Cheddar cheese
  • 6 cups shredded lettuce
  • 1 cup chopped tomato
  • 1 cup sliced green onions
  • 1 (8 ounce) package nacho cheese-flavored corn chips (such as Doritos®), crushed
Instructions:
  • In a large skillet over medium-high heat, cook the beef with taco seasoning until it's perfectly browned and crumbly, for about 5 to 7 minutes. Allow it to cool before using.
  • While waiting, bring a generously salted large pot of water to a boil. Cook the rotini until al dente, approximately 8 minutes. Drain and allow to cool for about 10 minutes before proceeding.
  • Toss together chilled beef, rotini, French dressing, black beans, and Cheddar cheese until fully combined. Refrigerate until serving time.
  • Gently combine lettuce, tomato, and green onions. Finish with a scattering of crushed chips on top or on the side for a satisfying crunch.
