Taco salad with sour cream dressing

Ingredients:
  • 150ml sour cream
  • Juice of 1/2 lemon
  • 1 garlic clove, crushed
  • 1 red onion, thinly sliced
  • 1 telegraph cucumber, peeled, roughly chopped
  • 500g cherry tomatoes, quartered
  • Kernels from 4 cooked corn cobs
  • 100g baby rocket leaves
  • 230g pack plain corn chips
Instructions:
  • Combine the sour cream, lemon juice, and garlic, gradually mixing in approximately 2 tablespoons of warm water until a silky dressing forms. Season to taste and let it rest.
  • Combine all the remaining ingredients in a serving bowl. Just before serving, mix in the chips and dressing.
