Cheesy, spicy taco skillet dip - easy to make and perfect for sharing.
Ingredients:
  • 1 pound ground beef
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 tablespoon taco seasoning
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper, optional
  • 10 ounce can diced tomatoes and green chiles (such as RoTel®)
  • 1 cup grated sharp Cheddar, divided
  • 1 cup grated Monterey Jack cheese, divided
  • 1/2 cup grated white Cheddar, divided
  • 8 ounce cream cheese
  • 4 ounce sour cream
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • In a large skillet over medium-high heat, melt butter and cook ground beef until browned and crumbly, about 5 to 7 minutes. Add onion and garlic, cook until softened for about 10 minutes. Drain excess grease.
  • Mix in taco seasoning, cumin, cayenne, and diced tomatoes with green chiles. Keep aside 1/4 cup each of sharp Cheddar, Monterey Jack, and white Cheddar. Stir the rest of the sharp Cheddar, Monterey Jack, and white Cheddar into the beef mixture.
  • Place the brick of cream cheese in the center of the skillet and add dollops of sour cream around it.
  • After 15-20 minutes in the preheated oven, blend cream cheese and sour cream into the beef mixture. Sprinkle the remaining 3/4 cup of cheese on top.
  • Place skillet back in the oven and bake until the cheese is golden brown and the edges are bubbling, approximately 10 minutes longer. Allow it to rest for about 5 minutes before serving with chips or dippers.
