Tamari beef and vegetable stir-fry

30-Minute Quick and Delicious Stir-Fry.
Ingredients:
  • 2 tsp finely grated ginger
  • 2 tsp sambal oelek
  • 60ml tamari
  • 60ml mirin
  • 600g Beef Round Steak, thinly sliced
  • 1 medium red onion, cut into thin wedges
  • 2 zucchini, halved lengthways, thickly sliced diagonally
  • 1 large carrot, peeled, halved lengthways, thickly sliced diagonally
  • 150g sugar snap peas, trimmed
  • 2 spring onions, thinly sliced
  • 3.00 gm sesame seeds, toasted
Instructions:
  • Mix ginger, sambal oelek, 1 tbs tamari, and 1 tbs mirin in a shallow glass or ceramic dish. Coat the beef by tossing it in the mixture. Combine the rest of the tamari and mirin in a small bowl.
  • In a hot wok, sizzle beef in batches with half the oil for 2-3 mins until it browns. Then, transfer to a bowl.
  • Heat the remaining oil in a hot wok. Stir-fry onion, zucchini, and carrot until softened, about 3 minutes. Add sugar snap peas and 2 tablespoons of water, then stir-fry for another 2 minutes until vegetables are tender.
  • Add the beef back to the wok, pour in the tamari mixture, and stir-fry for 2 mins until warmed. Serve over rice in bowls, garnish with spring onions and sesame seeds. Enjoy!
