Ingredients:
  • 80mls (1/3 cup) wheat-free, gluten-free tamari
  • 60mls (1/4 cup) honey
  • 18.20 gm peanut oil
  • 3 garlic cloves, crushed
  • 4cm piece fresh ginger, finely shredded
  • 8 small (about 1kg) chicken drumsticks
  • 300g (1 1/2 cups) brown rice
  • 2 bunches gai laan (Chinese broccoli), washed, drained
Instructions:
  • Preheat the oven to 200°C. In a large bowl, mix tamari, honey, oil, garlic, and ginger. Set aside 2 tablespoons of the mixture. Add drumsticks to the marinade and coat well. Transfer drumsticks and marinade to a large baking dish. Bake in the preheated oven for 25 minutes, basting occasionally, until fully cooked.
  • Cook the rice according to the package instructions until tender. Drain and cover to keep warm.
  • Heat a large wok over high heat until sizzling. Stir in the gai laan and reserved marinade, tossing for 1 minute. Cover and cook for an additional minute until the leaves are wilted and the stems are tender.
  • Present the drumsticks alongside the rice, gai laan, and all the delicious pan juices.
