Delightful chargrilled tandoori chicken, perfect for a light and flavorful summer dinner.
Ingredients:
  • 500g chicken tenderloin
  • 125.00 ml plain yoghurt
  • 49.60 gm tandoori paste
  • 82.50 ml chopped fresh coriander leaves
  • olive oil cooking spray
  • 1 small red onion, finely chopped
  • 1 Lebanese cucumber, peeled, finely chopped
  • 2 roma tomatoes, chopped
  • 42.00 gm lime juice
  • 8 large pappadums
  • lime wedges and
  • plain yoghurt, to serve
Instructions:
  • Combine chicken, yogurt, tandoori paste, and a generous 1/4 cup of chopped coriander in a bowl. Mix until well blended.
  • Prepare your barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Grill the chicken for 3 to 4 minutes on each side until it is fully cooked.
  • In a large bowl, combine the onion, cucumber, tomato, lime juice, and remaining coriander. Toss gently to mix. Cook the pappadums according to the packet directions.
  • Lay the chicken on the pappadums, spoon over the onion mixture, and garnish with lime wedges and a dollop of yoghurt.
