Ingredients:
  • 24.80 gm tandoori paste
  • 20.00 ml plain yoghurt
  • 1 large (about 200g) chicken breast fillet
  • 1 24cm pre-cooked pizza base with sauce (Don Emilio's or Boboli brand)
  • 1/2 small red onion, cut into thin wedges
  • 1 bocconcini cheese, thinly sliced
  • 40.00 ml plain yoghurt, extra, to serve
  • 20.00 ml fresh coriander leaves, to garnish
Instructions:
  • Preheat your oven to a toasty 200°C.
  • Mix the tandoori paste and yogurt together in a small bowl. Coat the chicken breast fillet generously with the tandoori paste mixture.
  • Heat a non-stick frying pan over high heat. Cook the chicken for 2 minutes on each side until nicely browned. Remove from the pan and let it cool slightly before slicing into 5mm-thick pieces across the grain.
  • - On a baking tray, lay out the pizza base then top with chicken slices, onion, and bocconcini. - Bake in the preheated oven until chicken is cooked and bocconcini is melted, about 10 minutes. - Take the pizza out of the oven, drizzle with extra yogurt, and sprinkle with fresh coriander leaves for garnish.
