Balsamic-bacon dressed green beans and bell peppers complement BBQ chicken perfectly.
Ingredients:
  • 3 slices bacon, cut into 1/2-inch pieces
  • 3/4 cup balsamic vinaigrette dressing
  • 1 1/2 cups ready-to-eat baby-cut carrots
  • 1 medium onion, cut into 8 wedges
  • 1 medium green bell pepper, cut into 8 pieces
  • 1 medium red bell pepper, cut into 8 pieces
  • 8 oz fresh whole green beans, trimmed
  • 4 boneless skinless chicken breasts (4 to 5 oz each)
Instructions:
  • Preheat gas or charcoal grill. Cook bacon in a 12-inch nonstick skillet, stirring occasionally, until crispy. Transfer bacon to a paper towel to drain. Keep 2 tablespoons of bacon drippings in the skillet.
  • Incorporate dressing into skillet drippings, then set aside. Reserve 1/4 cup of the dressing mixture from the skillet.
  • Toss carrots, onion, bell peppers, and beans in the flavorful dressing in the skillet until coated. Use a slotted spoon to transfer the vegetables to a grill basket. Keep the remaining dressing mixture in the skillet for later use.
  • Grill the chicken in a grill basket over medium heat, covered, for 15 to 20 minutes. Shake the grill basket occasionally, flip the chicken once, and brush it with the reserved dressing mixture from the skillet. Cook until the vegetables are crisp-tender and the chicken's juices run clear or it reaches an internal temperature of 170°F.
  • When ready to plate, surround the chicken with the assortment of vegetables. Top with crispy bacon and generously drizzle with the remaining 1/4 cup of the flavorful dressing mixture.
