Chicken-Bacon Pressed Picnic Sandwiches

Elevate chicken-bacon sandwiches with a delicious twist using raspberry preserves and horseradish mustard for a sweet and tangy flavor. Ideal for picnics!
Ingredients:
  • 0.25 cup raspberry preserves
  • 3 tablespoons horseradish mustard, or to taste
  • 1 (1 pound) loaf bread
  • 6 ounces Louis Rich Deli Thin Rstd Chicken Breast
  • 6 thick slices cooked bacon
  • 2 slices Havarti cheese
  • 4 leaves romaine lettuce, chopped
Instructions:
  • Mix raspberry preserves and horseradish mustard together in a bowl until well combined. Set aside a small amount of sauce for serving.
  • Cut the loaf of bread in half. Spread a generous amount of the remaining sauce on the bottom half. Layer chicken, bacon, cheese (adjust slices to fit), and lettuce over the sauce. Top with the other half of the bread.
  • Wrap the sandwich in plastic wrap and place on a baking sheet. Top with another baking sheet and weigh down with books or a heavy object to press the sandwich. Refrigerate for 8 hours to overnight for the flavors to meld.
  • To serve, unwrap the sandwich and cut it into 4 pieces before enjoying with extra sauce on the side.
