Tangy mustard and herbs elevate this quick and crunchy horseradish coleslaw.
Ingredients:
  • 1 head green cabbage (about 2 lb)
  • 2 cups mayonnaise or salad dressing
  • 2 tablespoons prepared horseradish
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar (omit if using salad dressing)
  • 1 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon freshly ground pepper
  • 3 medium carrots, shredded (1 1/4 cups)
Instructions:
  • Quarter the cabbage and remove the core. Place a quarter flat side down on a cutting board and thinly slice it. Chop the slices to make smaller pieces. Repeat with the remaining quarters until you have about 10 cups of shredded cabbage.
  • Combine mayonnaise, horseradish, vinegar, mustard, sugar, salt, celery seed, pepper, and garlic in a large bowl. Add carrots and cabbage, stir thoroughly. Enjoy right away or refrigerate for up to 3 hours.
