Zesty tuna casserole with crunchy breadcrumbs, a simple and satisfying weeknight dinner, ideal for Lenten Fridays.
Ingredients:
  • 1 (8 ounce) package elbow macaroni
  • 2 (8 ounce) cans tomato sauce
  • 2 (7 ounce) cans tuna, drained
  • 1 (8 ounce) container cottage cheese
  • 1 onion, minced
  • 1 (4 ounce) package cream cheese, softened
  • 0.25 cup sour cream
  • 1 teaspoon salt
  • 0.5 cup bread crumbs
  • 2 tablespoons butter, melted
Instructions:
  • Bring a large pot of salted water to a boil, then cook elbow macaroni until al dente, about 8 minutes. Drain well.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously butter a 2 1/2-quart casserole dish.
  • Combine macaroni, tomato sauce, tuna, cottage cheese, onion, cream cheese, sour cream, and salt in the casserole dish. Mix bread crumbs and butter in a separate bowl; spread on top of the tuna mixture.
  • Bake the casserole in the preheated oven until golden and bubbling, around 35-40 minutes.
