Spicy vegan corn chowder with red chile peppers for an extra kick.
Ingredients:
  • 2 (12 ounce) cans whole kernel corn
  • 3 cups vegetable broth
  • 3 potatoes, diced
  • 1 large onion, diced
  • 1 clove garlic, minced
  • 2 red chile peppers, minced
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 1 tablespoon parsley flakes
  • black pepper to taste
  • 1.75 cups soy milk
  • 0.25 cup margarine
  • 1 lime, juiced
Instructions:
  • Combine corn, vegetable broth, potatoes, onion, garlic, red chile peppers, chili powder, salt, parsley, and black pepper in a slow cooker. Cook on Low for 7 hours covered.
  • Transfer the vegetable mixture into a blender, filling it no more than halfway. Secure the blender lid with a kitchen towel, pulse a few times, then puree until smooth. Transfer to a clean pot. Alternatively, use a hand blender directly in the cooking pot. Once smooth, return to the slow cooker, add soy milk and margarine, and cook on Low for 1 hour. Serve with lime juice.
