Tarragon Fish Chowder

Cozy up with a quick and luxurious fish chowder on a cold winter evening. Ready in just 20 minutes!
Ingredients:
  • 1/2 pound cod or other lean fish fillets
  • 1 1/2 cups chicken broth
  • 1 small onion, chopped (1/4 cup)
  • 1/4 cup sliced celery
  • 1/4 cup shredded carrot
  • 3/4 teaspoon chopped fresh or 1/4 teaspoon dried tarragon leaves
  • 1/8 teaspoon pepper
  • 1 bay leaf
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour
Instructions:
  • Cut the fish fillets into bite-size pieces, then combine them with the broth, onion, celery, carrot, tarragon, pepper, and bay leaf in a 1 1/2-quart saucepan. Bring to a boil, then simmer.
  • Simmer until fish flakes easily with a fork and vegetables are tender, then stir in milk and heat through.
  • Whisk together sour cream and flour, then incorporate into the milk mixture. Stir constantly and cook until the mixture begins to bubble (avoid boiling). Remove from heat promptly and discard the bay leaf.
