Tarte a l'Oignon (French Onion Pie)

Savory Alsace onion tart with bacon, caramelized onions, and creamy filling in a flaky pie crust - a French-German delight.
Ingredients:
  • 10 slices bacon, cut into 1 inch pieces
  • 5 onions, thinly sliced
  • 1 teaspoon salt
  • 0.125 teaspoon freshly ground black pepper
  • 0.5 cup milk
  • 0.5 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 4 eggs
  • 1 pinch ground nutmeg
  • 1 (9 inch) unbaked pie crust
Instructions:
  • Heat up your oven to 400 degrees F (200 degrees C).
  • Cook the bacon in a skillet over medium heat until browned. Take out the bacon from the skillet, saving 4 tablespoons of bacon fat, and drain it on paper towels.
  • In the skillet with the delicious bacon fat, sauté the onions over medium-high heat until beautifully browned, approximately 8 minutes. Season with salt and pepper. In a bowl, mix together the milk and cream. Sprinkle flour over the onions, stir well, then pour in the milk mixture. Cook over medium heat, stirring constantly until the mixture thickens. Take off the heat, mix in the bacon, and let it rest for 10 minutes before serving.
  • Whisk the eggs in a bowl until pale and frothy. Gently fold in a spoonful of the onion mixture, then add another spoonful, repeating until all the onions are incorporated. Pour the mixture into the pie shell and sprinkle with nutmeg before baking.
  • Bake in a preheated oven until the crust turns a golden brown, approximately 20 minutes. Allow to cool for 5 minutes before serving.
