Home-style Tacos al Pastor (Chile and Pineapple Pork Tacos)

Ingredients:
  • 5 Goya Guajillo Chiles
  • 5 Goya Pasilla Chiles or Goya Ancho Chiles
  • 1 chipotle pepper from a can of Goya Chipotle Chile in Adobo Sauce
  • 1 medium white onion, halved
  • 1 (20 ounce) can Goya Pineapple Chunks
  • 0.25 cup Goya White Vinegar
  • 2 tablespoons Goya Minced Garlic
  • 1 teaspoon Goya Cumin
  • Goya Adobo with Pepper, to taste
  • 1 (2 1/2 pound) boneless, skinless pork butt, cut into 1/2-inch cubes
  • 2 tablespoons Goya Vegetable Oil
  • 1 (10 ounce) package Goya Corn Tortillas, warmed
  • 2 tablespoons finely chopped fresh cilantro
  • 1 lime, cut into wedges
Instructions:
  • 1. In a medium saucepan over medium-high heat, boil 2 cups of water. Add guajillo and pasilla chiles. Simmer on medium-low heat until chiles soften, about 10 minutes, then transfer to a plate. Remove and discard the stems and seeds. 2. While the chiles are simmering, coarsely chop one half of an onion, and set aside the remainder. 3. Strain the pineapples, keeping the juice and fruit separate.
  • In a food processor, blend guajillo, pasilla, and chipotle chiles with half an onion, pineapple juice, vinegar, garlic, and cumin until smooth, approximately 2 minutes. Pour the chile mixture into a saucepan over medium-high heat. Bring to a boil and simmer for about 2 minutes until the raw onion taste dissipates. Season with Adobo, then cool. Combine pork cubes, the cooled chile marinade, and pineapple chunks in a large container or a ziptop bag with a lid. Refrigerate and marinate for at least 2 hours, or up to 24 hours.
  • In a large skillet over medium-high heat, warm the oil. Drain the pork and pineapples, disposing of the marinade. Add the pork and pineapples to the skillet. Cook in batches until dark golden brown on all sides and cooked through, which should take around 15 minutes. Transfer the cooked pork and pineapples to a large serving plate.
  • Finely slice the remaining half of the onion and combine it with cilantro in a bowl. Serve the pork and pineapple mixture in warm tortillas and garnish the pork tacos with cilantro, onions, and limes.
