Ingredients:
  • 375g block puff pastry
  • 200g goat's fetta (or soft goat's cheese)
  • 20.00 ml chopped fresh chives
  • 20.00 ml chopped fresh thyme
  • 250g cherry tomatoes, halved
  • 40ml (2 tbsp) olive oil
  • 5.00 gm caster sugar
  • 1 egg, beaten
  • 60.00 ml grated parmesan
Instructions:
  • Preheat your oven to a toasty 180°C.
  • Roll out the pastry into a 25 x 30cm rectangle, then place it on a baking tray lined with parchment paper. Fold the edges to create a border, pinching them together. Gently prick the pastry base with a fork and chill in the refrigerator for 30 minutes.
  • Combine the goat's fetta with the herbs until smooth, then spread over the base. Arrange the tomatoes, cut-side up, over the fetta. Drizzle with oil, sprinkle with sugar, and season with salt and pepper.
  • Coat pastry edges with egg wash and bake for 10 minutes. Top tomatoes with parmesan and bake for an additional 10-15 minutes.
