Delicious shrimp tempura with a sake-infused dipping sauce featuring shallots, ginger, hot pepper sauce, cilantro, and soy sauce.
Ingredients:
  • 2 shallots, minced
  • 1 cup soy sauce
  • 0.25 cup sake
  • 1 tablespoon hot pepper sauce
  • 1 tablespoon minced fresh cilantro
  • 1 tablespoon diced ginger root
  • 1 cup rice flour
  • 1 cup cold seltzer water
  • 1 egg yolk
  • 1 pound large shrimp, peeled and deveined
  • 0.5 cup rice flour
  • 2 cups vegetable oil for frying
Instructions:
  • Combine shallots, soy sauce, sake, hot pepper sauce, cilantro, and ginger in a bowl and allow the flavors to meld for approximately 2 hours.
  • Combine 1 cup of rice flour with seltzer water and egg yolk in a bowl.
  • Take the shrimp and slice down the center, almost all the way through, then lay them flat. Gently pat dry with paper towels and coat with 1/2 cup of rice flour. Dip the shrimp in batter until fully coated.
  • Preheat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C. Fry shrimp in batches until golden brown, around 7 minutes. Drain on paper towels to remove excess oil. Serve with a side of dipping sauce.
