Vegetarian Moroccan pilaf with sweet sultanas, crunchy almonds, and ripe tomato slices.
Ingredients:
  • 18.20 gm olive oil
  • 20.00 ml Moroccan seasoning
  • 500.00 ml frozen mixed vegetables
  • 450g pkt microwaveable brown rice
  • 125.00 ml slivered almonds, toasted
  • 56.10 gm sultanas or raisins
  • 100g grape tomatoes, sliced
  • 1 onion, chopped
  • Coriander leaves, to serve
  • Toasted slivered almonds, extra, to serve
Instructions:
  • In a large saucepan over medium heat, sauté the onion for 5 minutes until soft. Add the spice mix and cook for 1 minute until fragrant. Stir in the vegetables and cook for 3-5 minutes until tender.
  • Combine rice, 1/4 cup of water, almonds, and sultanas in the pot. Cook for 1-2 minutes until heated through. Remove from heat and gently fold in the tomato.
  • Garnish the pilaf with fresh coriander and a sprinkle of extra toasted almonds before serving in bowls.
