Cozy up with this simple and comforting tater tot hotdish for chilly days.
Ingredients:
  • 2 tablespoons olive oil
  • 2 cups chopped yellow onion
  • 1 pound ground chuck beef (80% lean)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 2 (10.5 ounce) cans condensed cream of mushroom soup
  • 2 cups frozen cut green beans, thawed
  • 2 cups frozen sweet corn, thawed
  • 1.5 pounds frozen tater tots
  • 0.25 teaspoon seasoned salt (such as Lawry's®)
  • 0.5 cup shredded sharp Cheddar cheese
  • 2 small scallions, thinly sliced
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Preheat a large deep cast iron skillet over medium-high heat. Drizzle olive oil and swirl to coat the skillet. Layer onions evenly in the skillet, then add ground beef, breaking it into small pieces. Let cook without stirring until onions are translucent, about 2 minutes. Mix beef and onions well, and continue cooking until beef is browned and fully cooked, stirring occasionally, for 3 to 4 minutes.
  • Lower the heat to medium. Season the beef generously with garlic powder, onion powder, and black pepper. Cook, stirring frequently, for another minute. Take the pan off the heat and mix in the cream of mushroom soup, green beans, and corn until everything is thoroughly combined.
  • Combine tater tots and seasoned salt in a bowl, then artfully arrange them over the beef mixture in the skillet, ensuring there are no large gaps between the tots.
  • Bake the tater tots in the preheated oven until golden and crisp, for about 1 hour. Sprinkle with cheese and scallions, then let cool for 10 minutes before serving.
