Midwest comfort in a dish: savory turkey, crispy tater tots, gooey cheese. Irresistible!
Ingredients:
  • 2 tablespoons olive oil
  • 3 cups sliced brown mushrooms
  • 2 teaspoons kosher salt, or to taste
  • 1 cup chopped onion
  • 2 pounds ground turkey
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • pinch cayenne pepper
  • 1/4 cup all-purpose flour
  • 1 (4 ounce) can Hatch green chilies, or other diced chilies
  • 1 red bell pepper, seeded and diced
  • 2 1/2 cups chicken broth
  • 6 ounces shredded Cheddar cheese, divided
  • 1 (32-ounce) bag frozen tater tots
Instructions:
  • Preheat the oven to a sizzling 450 degrees F (230 degrees C).
  • In a large skillet over high heat, sizzle butter and olive oil. Sauté mushrooms with a generous pinch of salt until beautifully golden, about 3 to 5 minutes.
  • Sauté onions until translucent, approximately 3 minutes. Add turkey and cook until crumbled and browned.
  • Add the remaining salt, black pepper, paprika, garlic powder, and cayenne pepper into the mixture. Lower the heat to medium-high and continue cooking until the turkey is lightly browned, crumbly, and the liquid has mostly evaporated, for about 3 to 4 minutes.
  • Sprinkle flour and stir in, cook for 3 to 4 minutes to remove raw flour taste. Add green chiles, bell pepper, and chicken broth. Simmer until thickened to your preference, about 2 minutes. Adjust consistency by reducing for thicker or adding broth for a thinner texture.
  • Taste and adjust seasoning as desired. Transfer the mixture to a 9x12-inch, 9x13-inch, or similar casserole dish, smoothing the top. Sprinkle evenly with 4 ounces of shredded cheese, gently pressing it in with a spatula.
  • Spread a single layer of frozen or thawed tater tots evenly over the surface of the casserole dish (if using frozen, adjust oven time accordingly). Save any extra tots for another dish. Sprinkle the remaining cheese on top.
  • Bake until the tater tots are crispy and golden, about 30-35 minutes in the preheated oven.
