Ingredients:
  • 4 raspberry & peach fruit flavour infusion tea bags
  • 60g caster sugar
  • 12.00 gm gelatine powder
  • 150g frozen mixed berries, thawed
Instructions:
  • In a heatproof bowl, steep the tea bags in 3 cups (750 ml) of boiling water. Stir in the sugar until dissolved. Let it sit for 5 minutes to infuse flavors. Remove and discard the tea bags before serving.
  • Sprinkle gelatine over tea and whisk vigorously until dissolved. Allow to rest for 1-2 minutes to let bubbles settle, then pour into a jug.
  • Distribute berries evenly into four 3/4 cup (180ml) champagne glasses or jelly molds. Pour in the tea mixture. Chill in the refrigerator for 4-5 hours, or overnight, until firm.
