Colorful Cupcake Popper Sandwiches for team-inspired fun!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 2 teaspoons red liquid food color*
  • 2 cups from 2 tubs (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
Instructions:
  • Preheat oven to 350°F and generously spray 60 mini muffin cups. Prepare the cake batter according to the box instructions, incorporating your desired food coloring for a vibrant touch.
  • Spoon 1 level measuring tablespoon of batter into each muffin cup to fill.
  • Bake for 11 to 14 minutes until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 5 minutes, then remove. Let cool completely, about 10 minutes.
  • Prepare the poppers by slicing the tops off of 2 mini cupcakes horizontally (save bottoms for later use). Spread or pipe about 1 tablespoon of frosting on the cut side of one cupcake top. Create a sandwich by placing the cut side of the second cupcake top on the frosting and gently press together. Repeat this process with the remaining cupcake tops. Store the poppers loosely covered.
