Enjoy a delicious and wholesome dish of teriyaki beef stir-fry with veggies.
Ingredients:
  • 500g beef rump steak, trimmed
  • 125ml teriyaki marinade
  • 18.20 gm olive oil
  • 1 bunch spring onions, trimmed, halved
  • 1 large red capsicum, thickly sliced
  • 2 bunches broccolini, trimmed, halved
  • 200g rice
Instructions:
  • Place the steak in a shallow dish and generously coat it with the flavorful teriyaki marinade. Sprinkle freshly ground black pepper all over. Ensure the steak is fully coated in the mixture and let it marinate for at least 10 minutes, or longer for even more flavor infusion.
  • Preheat a non-stick frypan over medium-high heat. Take the beef out of the marinade, keeping the marinade aside. Cook the beef in the pan for 2 minutes on each side for medium-rare or until done to your preference. Wrap in foil and let it rest as you prepare the vegetables.
  • Clean the pan and place it over medium heat. Drizzle oil into the pan, then add the vegetables. Cook for 5 minutes, shaking the pan occasionally, until the vegetables are crisp-tender. Pour in the reserved marinade and 2 tablespoons of water. Let it simmer for 1-2 minutes before removing from heat.
  • Slice the beef thickly and serve it with the vegetables and steamed rice, topped with the delicious pan juices.
