Teriyaki beef with brown rice

Ingredients:
  • 62.50 ml store bought teriyaki marinade
  • 1 tsp finely grated ginger
  • 1/2 tsp sesame oil
  • 400g beef stir-fry strips (or 400g rump steak, trimmed and cut into strips)
  • 300.00 gm brown rice
  • 6.00 gm toasted sesame seeds
  • 2.50 gm cornflour
  • 80ml water
  • 2 green onions, cut into 3cm lengths
Instructions:
  • In a non-metallic bowl, combine teriyaki sauce, ginger, sesame oil, and beef. Toss well to coat. Cover and refrigerate for 15 minutes.
  • While the brown rice is cooking until tender, drain it and then mix in the sesame seeds. Cover the rice to keep it warm.
  • In a hot wok or large non-stick frying pan, heat a splash of peanut oil. Remove the meat from the marinade and set the marinade aside. Sear the meat in batches for about 3 minutes until golden. After each batch, transfer the cooked meat to a bowl, adding a touch more oil if needed.
  • In a small bowl, whisk together the cornflour and water until fully combined.
  • Transfer the cooked meat and pan juices back to the pan. Stir in the green onions and pour in the cornflour mixture. Cook for 2-3 minutes until the pan juices thicken slightly.
  • Arrange the teriyaki beef on a bed of fluffy brown rice and vibrant steamed Asian greens like bok choy for a delicious and balanced meal.
