Baked teriyaki meatballs in a delicious sweet and tangy pineapple sauce, great with rice, pasta, or as a sandwich filling!
Ingredients:
  • 1 pound ground beef
  • 0.25 cup bread crumbs
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons garlic, minced
  • 2 large egg whites
  • 1 (15 ounce) can crushed pineapple
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 1 pinch garlic salt, or to taste
  • ground black pepper to taste
  • 2 tablespoons cornstarch
  • 0.5 cup cold water
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with foil.
  • Combine ground beef, bread crumbs, soy sauce, brown sugar, garlic, and egg whites in a bowl until fully mixed. Shape into 1-ounce meatballs and place on a baking sheet.
  • Bake in the preheated oven for 25 minutes or until the center reaches a minimum temperature of 160°F (71°C).
  • Prepare the sauce by combining pineapple, soy sauce, brown sugar, and pepper in a saucepan over medium heat. Let it come to a boil, then lower the heat to a simmer.
  • Combine cold water and cornstarch in a small bowl, then pour the mixture into the sauce. Simmer until thickened to your liking, around 3 to 5 minutes. Finally, add the meatballs and cook until warmed through, approximately 5 minutes.
