Baked teriyaki salmon bowl with homemade sauce, served with rice and fresh veggies.
Ingredients:
  • 4 tablespoons low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 small clove garlic, chopped
  • 1 tablespoon chopped fresh ginger
  • 1 (6 ounce) salmon filet
  • 1/4 cup grated carrots
  • 2 thinly sliced radishes
  • 1 cup shredded red cabbage
  • 1 cup cooked rice
  • 1 teaspoon sesame seeds (optional)
  • 1 green onion, thinly sliced (optional)
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously spray a baking dish with cooking spray.
  • Mix soy sauce, brown sugar, garlic, and ginger in a small bowl. Put the salmon in the baking dish, skin side down, and drizzle with teriyaki sauce.
  • Cook in the heated oven until the fish easily flakes with a fork, about 12-15 minutes.
  • In a bowl, layer rice with salmon, spoon over teriyaki sauce from the baking dish. Add shredded cabbage, grated carrots, and radishes. Garnish with sliced green onions and sesame seeds.
