Try this irresistible teriyaki salmon poke bowl for a delicious meal anytime.
Ingredients:
  • 2 Skinless Salmon Portions, cut into 2cm pieces
  • 40.00 ml teriyaki marinade
  • 400g edamame or broad beans
  • 450g pkt microwavable brown rice
  • 400g pkt Poke Slaw Kit
  • 1 Lebanese cucumber, thinly sliced crossways
  • 2 spring onions, thinly sliced
  • Pickled ginger, to serve
Instructions:
  • Mix the salmon with the marinade in a bowl and refrigerate for 15 minutes to enhance the flavors.
  • Prepare the edamame or broad beans according to the package instructions in a large saucepan of boiling water. Peel the beans and transfer them to a bowl.
  • In a large non-stick frying pan over medium heat, heat oil. Cook salmon, turning occasionally, for 4-5 minutes until golden brown or cooked to your desired doneness.
  • While the rice is cooking as per packet instructions, transfer the salad mix from the kit into a large bowl. Mix in half of the provided dressing and toss until well combined.
  • Evenly distribute the rice into serving bowls. Layer with the salad mixture, edamame or broad beans, salmon, cucumber, spring onion, and ginger. Garnish with sesame seeds from the salad kit and drizzle with the remaining dressing.
