Tex-Mex pasta salad with seasoned beef, pickled jalapenos, salsa, and Cheddar cheese for a zesty kick.
Ingredients:
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 (16 ounce) package fusilli pasta
  • 2 pounds extra lean ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (24 ounce) jar mild salsa
  • 1 (8 ounce) bottle ranch dressing
  • 1.5 red bell peppers, chopped
  • 6 green onions, chopped
  • 0.75 cup chopped pickled jalapeno peppers
  • 1 (2.25 ounce) can sliced black olives
  • 1 (8 ounce) package shredded Cheddar cheese
Instructions:
  • In a large pot, bring water to a boil. Add olive oil and salt. Stir in fusilli and cook until al dente, about 9 minutes. Drain pasta and set aside.
  • In a large skillet over medium-high heat, brown the ground beef until crumbly and no longer pink. Drain any excess grease, then stir in the taco seasoning mix. Set aside to cool.
  • In a medium bowl, mix together salsa, ranch dressing, bell peppers, green onions, jalapenos, and black olives. In a separate large bowl, combine the cooked pasta, cooled beef mixture, Cheddar cheese, and dressing mixture. Refrigerate for at least 1 hour before serving.
