"Whip up a delicious pasta dish featuring fresh bell peppers the whole family will love."
Ingredients:
  • 500.00 ml dried pasta curls
  • 2 corn cobs, husks and silk removed
  • 1 medium red capsicum, diced
  • 1 medium green capsicum, diced
  • 200g grape tomatoes, quartered
  • 1/2 medium red onion, finely chopped
  • 1 medium avocado, diced
  • 125.00 ml fresh coriander leaves
  • 65.63 gm lime juice
  • 2.60 gm Tabasco sauce
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain, rinse with cold water, and drain again.
  • Place the corn on a microwave-safe plate and loosely cover it with plastic wrap. Microwave on high for 4 minutes, or until tender. Set aside for 5 minutes to cool. Carefully remove the kernels from the cob.
  • Combine pasta, corn, capsicum, tomato, onion, avocado, and coriander in a large bowl. In a jar, mix lime juice, oil, and Tabasco. Shake well and drizzle over salad. Season with salt and pepper, toss, and serve.
