Award-winning pork rib recipe, adaptable for various cuts. Enhance flavor with wood chips on the grill for a smoky finish.
Ingredients:
  • 6 pounds pork spareribs
  • 1.5 cups white sugar
  • 0.25 cup salt
  • 2.5 tablespoons ground black pepper
  • 3 tablespoons sweet paprika
  • 1 teaspoon cayenne pepper, or to taste
  • 2 tablespoons garlic powder
  • 5 tablespoons pan drippings
  • 0.5 cup chopped onion
  • 4 cups ketchup
  • 3 cups hot water
  • 4 tablespoons brown sugar
  • cayenne pepper to taste
  • salt and pepper to taste
  • 1 cup wood chips, soaked
Instructions:
  • Prepare the ribs by removing any excess fat. Combine sugar, 1/4 cup salt, black pepper, paprika, 1 teaspoon cayenne pepper, and garlic powder in a medium bowl. Coat the ribs generously with the spice mix. Arrange the ribs in two 10x15 inch roasting pans with two racks in each. Cover and refrigerate for at least 8 hours.
  • Preheat the oven to a gentle 275 degrees F (135 degrees C) and bake the ribs uncovered until tender and nearly falling apart, which should take about 3 to 4 hours.
  • Transfer 5 tablespoons of the flavorful drippings from the roasting pans to a skillet over medium heat, sauté onion until golden and soft. Add ketchup and cook for 3 to 4 minutes, stirring constantly. Then, incorporate water, brown sugar, cayenne pepper, salt, and pepper to taste. Lower the heat, cover, and simmer for 1 hour, adjusting thickness with water as needed.
  • Get the grill nice and warm over a gentle flame.
  • Just before grilling, sprinkle soaked wood chips over the coals or put them in the smoker box of a gas grill. Brush the grill grate lightly with oil. Grill the ribs in two batches, ensuring they have space between them. Grill for 20 minutes, turning occasionally. During the last 10 minutes, brush the ribs with sauce to prevent burning.
