Savory beef and rice casserole topped with gooey melted cheese. Perfect for sharing with friends. Transform leftovers into delicious roll-ups!
Ingredients:
  • 1 onion, chopped
  • 3 cups water
  • 2 cups uncooked long grain white rice
  • 6 slices bacon
  • 1.5 pounds ground beef
  • 0.5 green bell pepper, seeded and chopped
  • 1 (28 ounce) can peeled and diced tomatoes
  • 1.5 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • In a saucepan, mix rice and water, and bring to a boil. Reduce heat, cover, and let simmer for 20 minutes.
  • In a large deep skillet, crisp up the bacon over medium-high heat until nicely browned. Set aside after crumbling and saving 2 tablespoons of the drippings. In the same skillet, brown the ground beef with green pepper and onion until cooked through. Remove any excess grease, then season with salt and pepper according to taste.
  • Preheat the oven to a toasty 400°F (200°C).
  • In a 9x13 inch baking dish, combine beef, cooked rice, tomatoes, bacon with drippings, and mix well. Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 30 minutes until the cheese is bubbly and the center is heated through.
