Delicious beef and vegetable rice dish, best served with a fresh green salad and warm sourdough bread.
Ingredients:
  • 1 cup water
  • 1 cup uncooked instant rice
  • 1 pound lean ground beef
  • 2 onions, chopped
  • 1 large green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 1 (8.75 ounce) can whole kernel corn, drained
  • salt and pepper to taste
  • 3 slices processed American cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 2 quart (8 inch round) casserole dish.
  • In a saucepan, boil 1 cup of water. Add instant rice, cover, and let sit off the heat for 5 minutes.
  • Heat a skillet over high heat and cook ground beef with onions and green pepper until browned. Add diced tomatoes, tomato sauce, and chili powder. Let it simmer for 20 minutes.
  • Combine the cooked rice with the beef mixture, then fold in the corn, salt, and pepper.
  • Transfer the mixture into the casserole dish and layer the American cheese slices on top by cutting them in half.
  • Bake until the cheese is melted and bubbly, in a preheated oven for 15 to 20 minutes.
