Budget-friendly Thai chicken tray bake with aromatic flavors, perfect for a quick and delicious family dinner.
Ingredients:
  • 6 large chicken thigh cutlets, skin on, trimmed
  • 87.50 gm Thai red curry paste
  • 18.20 gm peanut oil
  • 1 lime, cut into 1cm slices
  • 1 small brown onion, finely chopped
  • 3cm piece fresh ginger, peeled, finely grated
  • 1 lemongrass stalk, white part only, finely chopped
  • 1 carrot, finely diced
  • 300.00 gm white long-grain rice, rinsed
  • 637.50 gm salt reduced chicken style liquid stock
  • 200g green beans, trimmed, cut into 4cm pieces
  • 125g baby corn, thickly sliced
  • 21.00 gm lime juice
  • 1 green onion, thinly sliced diagonally
  • Sliced long red chilli, to serve
  • Chopped roasted peanuts, to serve
  • Fresh mint leaves, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Combine chicken with curry paste in a bowl, ensuring the chicken is well coated with the paste.
  • In a sturdy roasting pan, warm 1/2 tbs of oil over medium-high heat. Sear lime slices for 1 minute on each side until charred. Place on a plate. Add chicken, skin-side down, to the pan and cook for 3 minutes on each side until nicely browned. Transfer chicken to a plate.
  • After wiping the pan, heat the remaining 1/2 tablespoon of oil over medium heat. Add the brown onion, garlic, ginger, lemongrass, and carrot, and cook for 5 minutes until the onion softens. Stir in the rice for 2 minutes until coated in the mixture, then pour in the stock and bring to a boil.
  • Lay the chicken over the rice mixture, cover tightly with foil, and bake for 25 minutes. Uncover, fluff the rice with a fork, then add beans, corn, lime slices, fish sauce, and lime juice to the rice. Stir well. Place chicken over the rice and bake, uncovered, for 5 to 10 minutes until the rice is tender and the chicken is browned and cooked through. Sprinkle with green onion, chili, peanuts, and mint before serving.
