Tasty Thai marinated chicken kebabs with vibrant vegetables, perfect for a summer BBQ.
Ingredients:
  • 0.33333334326744 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon ginger puree
  • 2 pounds skinless, boneless chicken thighs
  • 1 medium yellow squash, sliced
  • 1 medium red onion, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 8 ounces whole button mushrooms
  • 1 tablespoon chopped fresh cilantro for garnish
Instructions:
  • Combine soy sauce, honey, sesame oil, Sriracha, garlic, and ginger puree in a large bowl, whisk until well blended. Add chicken, cover, and refrigerate for at least 4 hours, preferably overnight.
  • Get your outdoor grill ready by preheating it to medium heat and giving the grate a light coating of oil.
  • Skewer marinated chicken thighs and set aside. Toss squash, red onion, bell pepper, and mushrooms in remaining marinade until well coated.
  • Skewer the yellow squash, red onion, bell pepper, and mushrooms alongside the chicken on the platter.
  • Grill chicken and vegetable skewers for 20 minutes, flipping halfway through. Plate skewers on a clean serving platter and sprinkle with fresh chopped cilantro.
