Marinate chicken thighs in Thai basil, cilantro-lime, and fish sauce blend, then grill.
Ingredients:
  • 0.33333334326744 cup chopped fresh cilantro
  • 0.33333334326744 cup chopped fresh Thai basil
  • 0.25 cup fish sauce
  • 3 green onions, thinly sliced
  • 3 tablespoons canola oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon grated lime zest
  • 1 tablespoon dark brown sugar
  • 2 teaspoons freshly grated ginger
  • 0.75 teaspoon kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 2 pounds skinless, boneless chicken thighs
  • salt and ground black pepper to taste
Instructions:
  • Mix fresh cilantro, fragrant Thai basil, savory fish sauce, crisp green onions, zesty lime juice, tangy lime zest, sweet brown sugar, spicy ginger, flaky kosher salt, and a hint of pepper in a medium bowl.
  • Place the chicken thighs and cilantro mixture in a large zip-top bag. Refrigerate and marinate for 8 hours to overnight, remember to turn occasionally.
  • Heat up your outdoor grill to a medium-high temperature and brush the grate with a light coating of oil.
  • Discard marinade from chicken thighs, then generously season with salt and pepper.
  • Place the chicken on the hot grill and cook for 7 to 10 minutes on each side until fully cooked and registers a minimum of 165 degrees F (74 degrees C) on an instant-read thermometer. Serve piping hot.
