Thai Chicken with Spicy Peanut Sauce

Thai chicken with spicy peanut sauce made easy with Bisquick® mix. Impress your guests with this flavorful dish!
Ingredients:
  • 3 tablespoons butter or margarine
  • 1 cup Original Bisquick™ mix
  • 1 1/2 teaspoons curry powder
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 cup plain yogurt
  • 1/4 cup creamy peanut butter
  • 1/2 cup milk
  • 1 tablespoon soy sauce
  • 1/8 teaspoon ground red pepper (cayenne)
  • 2 tablespoons cocktail peanuts, finely chopped
Instructions:
  • Preheat the oven to 425°F. Place the butter in a 13x9-inch glass baking dish, allowing it to melt in the oven for 2 to 3 minutes.
  • Combine Bisquick mix, curry powder, garlic powder, and ginger in a small bowl. Dip chicken in milk, then coat with the Bisquick mixture before placing in a baking dish.
  • Bake the chicken for 20 minutes, then turn it over. Continue baking for roughly 10 minutes more, or until the chicken's juices run clear when the thickest part is cut (170°F).
  • In a 10-inch nonstick skillet, combine sauce ingredients and simmer over medium heat for 3 to 4 minutes, stirring occasionally, until the sauce thickens. Pour over chicken and garnish with peanuts before serving.
