Experience the vibrant flavors of Thailand with delectable Thai fried rice.
Ingredients:
  • 150g diced bacon
  • 2 spring onions, chopped
  • 600.00 gm cooked brown rice
  • 1/2 pineapple, peeled, cut into 5mm pieces
  • 125.00 ml blanched almonds, roasted
  • 1 red chilli, chopped
  • 62.50 ml coriander leaves, to serve
  • 36.80 gm brand blended vegetable oil
  • 2 tsp sesame oil
  • 42.00 gm soy sauce
  • 20.00 gm brand caster sugar
  • 1 tsp fresh ginger, grated
Instructions:
  • Combine oil, soy sauce, sugar, and ginger in a small jug, whisking until the sugar dissolves to make the dressing.
  • 1. Preheat a frying pan over medium-high heat. 2. Cook the bacon until crispy, about 2-3 minutes. 3. Add the spring onion and cook for 1 minute, then stir in the garlic and cook for 30 seconds. 4. Combine with rice, pineapple, almonds, and chili. 5. Cook for 5 minutes or until heated through. 6. Drizzle over the dressing and toss to combine. 7. Finish with a sprinkle of fresh coriander before serving.
