Thai Fried Rice

Popular Thai dish with bacon and ketchup, known as "American fried rice" in Thailand. Easy to make and delicious.
Ingredients:
  • 6 slices bacon, sliced crosswise into 1/2-inch pieces
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 large tomato, cubed
  • 0.5 cup chopped fresh pineapple
  • 5 cups cooked jasmine rice, cooled
  • 2 tablespoons ketchup
  • 2 tablespoons light soy sauce
  • 0.25 teaspoon freshly ground white pepper
  • 3 eggs, beaten
  • 0.5 cucumber, sliced
  • 2 green onions, chopped
  • 0.25 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • 4 green Thai chile peppers
Instructions:
  • In a large skillet or wok over medium heat, fry the bacon until golden and crispy, which should take around 5 minutes. Remove the bacon and save the flavorful grease in a bowl. Return 2 tablespoons of the reserved grease back to the skillet.
  • Turn up the heat to medium-high, sauté the garlic until fragrant for about 30 seconds. Add the onion and cook until softened, stirring frequently, for 2 to 3 minutes. Mix in the tomato and pineapple and stir-fry until heated through, around 2 minutes.
  • Turn up the heat and introduce 1 tablespoon of flavorful bacon grease into the pan. Toss in the rice and stir vigorously to evenly coat it in the rich bacon grease. Stir-fry for approximately 3 minutes. Finish off with a flavorful seasoning of ketchup, soy sauce, sugar, and white pepper.
  • Transfer the rice mixture to one side of the skillet or wok, then pour the beaten eggs onto the empty side. Stir-fry until the eggs are almost set, for about 2 to 3 minutes. Combine the eggs with the rice mixture and then gently fold in the bacon bits. Serve alongside cucumber, green onions, cilantro, lemon wedges, and chile peppers.
