Thai pork rissoles and quinoa salad recipe

Thai-inspired pork patties with quinoa and crisp veggies.
Ingredients:
  • 500g extra lean pork mince
  • 4 green shallots, finely chopped
  • 40.00 ml chopped fresh coriander leaves, plus extra, to serve
  • 30.00 ml Thai seasoning paste
  • 120g mixed salad leaves
  • 4 qukes (baby cucumbers), quartered lengthways
  • 250g tomato medley mix, halved
  • 4 radishes, sliced
  • 42.00 gm fresh lime juice
  • 21.00 gm salt-reduced soy sauce
  • 2.50 gm caster sugar
  • 300g (2 cups) steamed quinoa
  • Lime wedges, to serve
Instructions:
  • Mix the pork, shallot, coriander, and 1 tablespoon of seasoning paste in a bowl, then shape the mixture into 12 patties.
  • Lightly coat a large frying pan with oil and heat over medium-high heat. Cook patties for 3-4 minutes on each side, or until thoroughly cooked.
  • In a bowl, mix together the salad leaves, cucumber, tomato, and radish. In a separate small bowl, combine the lime juice, soy sauce, sugar, and leftover seasoning paste.
  • Plate the patties, quinoa, and salad individually. Top with lime dressing, sprinkle extra coriander, and serve with lime wedges.
