Delightful Thai pork stir-fry bursting with flavorful herbs and spices.
Ingredients:
  • 18.20 gm peanut oil
  • 1 red onion, sliced into thin wedges
  • 20.00 ml finely chopped lemongrass
  • 1 long red chilli, finely chopped
  • 20.00 ml finely chopped ginger
  • 2 garlic cloves, finely chopped
  • 500g pork mince
  • 56.00 gm gluten-free massaman curry paste (see note)
  • 100g green beans, cut into 5cm lengths
  • 36.60 gm fish sauce
  • 42.00 gm lime juice
  • 250.00 ml Thai basil leaves (see note)
  • Cooked thin rice noodles, to serve
Instructions:
  • In a hot wok, sauté onion, lemongrass, chili, ginger, and garlic until fragrant, about 1 minute. Add pork and cook until done, about 4-5 minutes.
  • Sauté the curry paste until fragrant, then add the beans, fish sauce, lime juice, and sugar. Cook until beans are just tender. Stir in half of the basil. Serve over rice noodles and top with remaining basil.
