Fragrant fish curry paired with crisp cucumber salad.
Ingredients:
  • 4 (about 300g each) fresh mackerel
  • 56.00 gm Thai red curry paste
  • 5.00 gm caster sugar
  • 40.40 gm coconut milk
  • 2 Lebanese cucumbers, peeled
  • 12 cherry tomatoes, chopped
  • 40.00 ml mint leaves
  • Dash of fish sauce
  • Dash of lime juice
  • Lime cheeks, to serve
Instructions:
  • Heat the grill on high while lightly oiling a large baking tray.
  • Rinse the fish and gently dry with paper towel. Mix red curry paste, sugar, coconut milk, sea salt, and pepper in a bowl.
  • Lay the mackerel on the baking tray and generously coat it with the curry mixture. Place it under the hot grill for 5 minutes. Turn the fish gently and continue grilling for 6-10 minutes until the mackerel skin crisps up and the flesh is fully cooked.
  • Peel cucumber into long strips with a vegetable peeler, then cut into matchsticks. Combine with tomato, mint, fish sauce, lime juice, salt, and pepper. Serve mackerel with the cucumber salad and lime.
